Easy Homemade Mayo

1 EGG
½ LEMON, JUICE
1 TBSP APPLE CIDER VINEGAR
1 TSP DIJON MUSTARD
1 TBSP INULIN
450ML GOOD PHATS LIGHT AVOCADO OIL
SALT & PEPPER TO TASTE

Method:How to make mayonnaise at home?
BLEND
Step One:
Add the egg, lemon juice, apple cider vinegar, Dijon mustard, inulin, sea salt & Light Avocado Oil to a tall container, like a Pyrex measuring jug.
Insert a stick blender & blend until it emulsifies into a thick, creamy mayonnaise. Taste & adjust seasoning with additional salt, pepper, or lemon juice as needed.
SERVE
Step Two:
Transfer the mayo to a sterilized jar or container & store in the fridge for up to one week—or simply serve right away!
Chef’s Tip
This mayo is the perfect base for tartare sauce, Caesar dressing, or flavoured dips. Add minced garlic or fresh herbs for a quick aioli, or stir in capers & pickles for a zesty tartare!
