INGREDIENTS

HANDFUL FLAT-LEAF PARSLEY, LEAVES PICKED

SMALL HANDFUL MINT, LEAVES PICKED

SMALL HANDFUL DILL, LEAVES PICKED

2 HEAPED TSP DRAINED CAPERS

A GOOD SPOONFUL OF CORNICHONS (ABOUT 7-8)

1 SMALL SHALLOT, PEELED

1 SMALL GREEN CHILLI

ZEST OF 1 LEMON

GENEROUS GLUG OF GOOD PHATS ORGANIC EXTRA VIRGIN OLIVE OIL

SEA SALT & CRACKED BLACK PEPPER, TO TASTE

Method: How to make salsa verde at home?

CHOPPING

Step One
Save yourself the mess—no need for food processors or even a pestle and mortar! Everything can be prepped right on a chopping board.

Wash the parsley, mint, and dill and pick the leaves from their stems.

Step Two
Place the herbs on the chopping board along with the capers, cornichons, peeled shallot, green chilli, and lemon zest. Sprinkle over a pinch of sea salt and cracked black pepper.

Step Three
Using a sharp knife, chop everything finely. Keep chopping until it forms a rustic, well-blended salsa.

MIXING

Step Four
Transfer the chopped mixture to a bowl and stir in a generous glug of GOOD PHATS Extra Virgin Olive Oil. Mix well, taste, and adjust the seasoning as needed.

SERVE

Drizzle over grilled meats, roasted veggies, or use as a vibrant dip. A punchy, herby sauce with a good glug of GOOD PHATS!
